The Seitan Scaloppini at New York City’s Blossom restaurant was a major revelation to me when I was wrestling with my renewed veganism after an intermission as a dedicated gourmet foodie. One bite confirmed that being vegan didn’t mean making an ascetic choice to forsake all delicious food, and certainly didn’t mean that I would be doomed to eat only blended kale shakes for the rest of my life.
