If you want to jam as much flavor onto a crust as possible, this is the flatbread for you. Pissaladière, a rustic French take on pizza, is a main attraction—not a side dish. And it will make you wonder if the French or the Italians do it better. (Pizza making, I mean.) The aromatic crust and onion sauce draw inspiration from Mediterranean and French cuisine. Feel free to improvise the toppings—it’s still a pizza, after all.
