In India, using tofu is becoming so popular that tofu is often labeled “soy paneer.” The trick to a great Palak paneer is to combine two textures of seasoned spinach: one blended into the sauce, and one sautéed for a chewy texture that keeps the mouth interested while treasure-hunting for the soy paneer.
