Traditional Indian foods are natural choices for vegetarians and can easily be made vegan with a few substitutions. With some love, tofu can mimic paneer, an uncured cheese common in India. In India, using tofu is becoming so popular that tofu is often labeled “soy paneer.” The trick to a great Palak paneer is to combine two textures of seasoned spinach: one blended into the sauce, and one sautéed for a chewy texture that keeps the mouth interested while treasure-hunting for the soy paneer.
