  • 2 cups citrus peels, cut into strips with pith intact but no fruit attached

Method

  1. Combine the citrus peels and 4 cups cold water in a bowl. Let sit for 15 minutes, then drain well.
  2. Transfer the peels to a small saucepan, cover with water, and boil for 15 minutes.
