Rocky road ice cream does not disappoint the texture lovers among us. Crunchy and sweet, chewy with a touch of dark chocolate bitterness, it hits every note. The image shows the bricks to the rocky road formed in mini-muffin pans, but the ice cream can also be swirled into a tub like conventional ice cream and scooped out. This recipe has a minty twist which I prefer for rich chocolate and nuts, but if classic rocky road flavors are preferred, use a plain simple syrup instead.
