No, it doesn’t taste exactly like chicken. And no, you probably won’t find it at your local supermarket. But crocodile is grilled in Kenya, not to mention many other parts of Africa, and every ambitious griller should know how to prepare it.

The trick is to cut the meat in small pieces and marinate them in lime juice or another acidic liquid. This makes meat that you’d expect to be tough turn out to be surprisingly tender. Grilled crocodile is a specialty of the Carnivore restaurant
