At Carnivore they serve crocodile with a garlic potato sauce that may remind you of Greek skordalia. I’ve taken a few liberties with the recipe; bread gives you a lighter sauce than potatoes. The result is a sauce fragrant with fresh lime zest and lime juice coupled with earthy undertones of walnut.

Ingredients

For the Sauce

  • 4 slices white sandwich bread, crusts cut off
  • ¼ cup walnuts or almonds, coarsely chopped

Method

  1. Place the slices of bread in a mixing bowl and add enough warm water to cover. Let the bread soak for 5 minutes, then drain it well in a strainer. Using your hands, squeeze the bread well to wring out any excess liquid.
