Italians have a greater appreciation (higher tolerance?) for simplicity than most North Americans do. (Certainly more than I do.) Here’s a Tuscan salsalike salad you can serve next to bistecca, this one made with the region’s beloved cannellini beans. If you’re feeling ambitious, cook dried beans from scratch. But good canned beans will give you a highly agreeable salad, too. If you are starting with dried beans, be sure to leave enough time for them to soak overnight.
