A creamy white condiment, tart with yogurt and lemon juice, pungent with garlic, and crunchy with diced cucumber, tzatziki turns up whenever Greeks put meat to fire. The Aussie twist here is the grilled olives—adding smoke to salt, as it were. You can grill the olives just before you put on the kangaroo kebabs or at a previous grill session. Greek yogurt has the consistency of sour cream. One good brand, Fage, is available at most natural foods stores and some supermarkets.
