Preserved lemon is one of the most intense flavors on Planet Barbecue. Cross a fresh lemon with a cornichon or a really strong dill pickle and you’ll start to get the idea. It’s hard to think of a marinade, sauce, relish, salad, or other dish that wouldn’t benefit from its addition.

Ingredients

  • 2 large or 3 medium-size juicy lemons
  • ½ cup Coarse salt (kosher or sea

Method

  1. Scrub each lemon with a brush under hot water. Cut each lemon in half crosswise and cut each half in quarters. Remove any seeds with a fork.
  2. Place the lemons and salt in a nonreactive mixing bowl and toss to mix. Transfer the mixture to a clean sterile canning jar, scraping the salt and juices into it with a spatula.
