Balkan Grilled Veal and Pork “Burgers”

Cross a North American hamburger with a German bratwurst and you get an idea of one of the world’s great grilled ground meat patties—ćevapčići (pronounced che-VAP-chee-chee). Popular throughout the Balkans, ćevapčići is a staple and a fast food from Bosnia to Bulgaria, from the Danube to the Black Sea (there’s even a Turkish version called köftesi). Cevapčići starts with ground meat, usually a two-to-one mixture of veal and pork
