These kebabs are a specialty of Demircan’s native Gaziantep, renowned throughout the Near East for its sweet, fat, luscious electric-green pistachio nuts. To make the kebabs mix together:

Ingredients

  • pounds finely chopped ground lamb
  • ¾ cup shelled pistachio nuts, preferably from Gaziantep, Turkey (look for them at Near Eastern markets and in natural food stores)
