Almost all Filipino barbecue comes with some version of this bracing, tart, salty sauce. There are surely as many variations as there are Filipinos. The basic model features equal parts soy sauce and vinegar, which you customize by adding black pepper, chopped onion, garlic, and/or chile peppers. Use the sauce for dipping any sort of Filipino grilled meat or seafood.
