This recipe is loosely modeled on Vietnam’s ubiquitous nuoc cham, a dipping sauce. Like any self-respecting American barbecue sauce, it is simultaneously sweet, salty, tart, garlicky, and aromatic, but it achieves these flavors without being thick like ketchup. It’s simply the most delicate and refined barbecue sauce I know of on Planet Barbecue.
