Another Thanksgiving tradition—this one with roots in Colonial America, for in the eighteenth century, the sweet, brown, fortified Portuguese wine known as Madeira enjoyed the sort of enthusiasm that cabernet sauvignon does today. A fat separator (it looks like a measuring cup with a spout attached on the bottom) is a great help for separating the meat juices from the fat.
