Harissa belongs to a broad family of fiery grill condiments that includes Indonesian sambal and Provence’s rouille.

Ingredients

  • ¼ cup sweet or hot paprika
  • 1 to 3 teaspoons hot red pepper flakes

Method

  1. Place the paprika and hot pepper flakes in a heat-proof mixing bowl and add the boiling water. Let stand until a thick paste forms, about 5 minutes.
  2. Transfer the pepper paste to a food processor. Add the salt, coriander, cumin, garlic, and tomato and puree to a smooth paste. Add the olive oil and enough water (2 to 4 tablespoons) to obtain a thick but pourable
