Sweet-sour sauces turn up throughout Southeast Asia, where they’re used as dips for grilled meats. When you stop to think about it, the flavor profile—sweet-tart-salty—resembles that of many North American barbecue sauces, although the thin, clear, watery texture is similar only to a North Carolina vinegar sauce. Warm the honey in a shallow pan of simmering water to make it easier to pour and measure.
