Kosovan Grilled Mushrooms

Like most Europeans, Kosovars are mushroom fanatics. Mushrooming is not only a weekend pastime, it’s an important source of income. Indeed, a lot of the truffles, porcini, and other exotic mushrooms sold in Western Europe actually come from Kosovar forests. The following recipe was inspired by Kosovar grill master, Velisic Blagoje, but virtually identical preparations can be found from the Spanish Atlantic to the Black Sea. For a heart-healthier version, mix the garlic and parsley with
