Tamales are a Mexican street food made from corn masa (a flour made from corn). You make a corn dough, then fill it with flavours. My favourites include Venezuelan banana skin, beans, spicy squash, smoked tomatoes and this more British twist – hemp-seed pesto. The majority of corn is now genetically modified but in its native form it’s a colourful and diverse crop. Seek out different varieties and try to choose non-GMO options.
