I believe we all need a quick salad recipe that will elevate garden greens and complement any plant feast. A no-faff salad that gives you what you need. The dressing has a slight kick to it, while harnessing sweet energy; make sure you add a good lashing to the salad. You can use any salad greens for this recipe.
Put the salad leaves into a salad bowl, then add the parsley leaves, cucumber, tomatoes, spring onions and avocado.
In a small bowl, mix all the dressing ingredients together well, season, then pour over the salad and toss.
Serve sprinkled with walnut dukkah.
