Fresh and calming. I always pair this with something spicy, to balance the dishes of a plant feast.
Squeeze the excess water out of the grated cucumber using your hands, then place in a bowl. Add the rest of the ingredients and mix well. Taste and season with a little more salt and pepper, if desired, then serve.
