Dukkah is a blend of nuts, seeds and spices used as a garnish in the Middle East. After playing around with many flavours, I knew I had to add the mighty hemp seed into the mix. Full of protein, this seed gives a good crunch, and when paired with cumin and coriander, it has a sweet, warming, earthy bite.

Ingredients

  • 1 tablespoon cumin seeds
  • 2 tablespoons coriander seeds
  • ¼ te

Method

In a hot frying pan, dry-fry the cumin seeds and coriander seeds until fragrant, around a couple of minutes. Transfer to a pestle and mortar and grind until you get a sandy texture, then tip into a bowl and add the cayenne and salt.

Toast the hemp seeds and the sesame seeds in a frying pan over a medium heat for 3 minutes until slightly browned, then transfer to the bowl with the cumin
