In northern India, the most common salad is generally known as kachumber. With crisp cucumbers, tomatoes, onions, and enticing chāt masālā, it is a refreshing side to nearly any meal. I like to add quinoa for a nutritious boost of protein and fiber, but you can certainly omit it, and you can reduce the amount of lime juice and chāt masālā if you prefer the salad in its simplest form. Cooked amaranth or farro may also be used in place of quinoa, if desired.
