Sāmbār is a tangy, spicy South Indian preparation of tuver/toor dāl (split pigeon peas). It has a nutty quality from the use of sāmbār podi. Sāmbār is delicious with rice and even better with piping hot Crispy Masala Dosā Rolls. Tamarind concentrate, available at Indian grocers in small jars, gives this dāl its characteristic tang, but, if unavailable, lime juice may be used to substitute. I use moringa (drumsticks)—also
