Keri no ras means “essence of mango” in Gujarāti. It’s simply a perfectly ripe mango blended until smooth and served as an accompaniment to any Gujarāti meal, sometimes topped with ground toasted cumin. I’ve provided the simplest recipe to introduce this most prized fruit of Indian cuisine to you.

Ingredients

  • 1 ripe mango
  • 1 tablespoon cumin seeds, optional
  • Pinch of ground ginger, optio

Method

  1. Peel the mango with a sharp paring knife.
  2. Score both sides of the mango to the core, first horizontally, then vertically. Make two more cuts and remove the mango flesh from both sides, cutting as close to the pit as possible.
  3. Score the remaining two slimmer sides of the mango and cut again to remove the flesh.
  4. Scrape off any remaining bits
