Nānkhatāi is a crisp biscuit often made from nuts, spices, and a combination of flours, and it’s designed to be dunked into piping hot chai. Whole pecans, oats, and nutmeg create a warmth that pairs wonderfully with Masālā Chāi. Purists won’t miss the traditional ghee, either—this version is made with olive oil and the difference is not at all detectable.
