This creamy dressing, warmed by the spices in garam masālā, is key to Garam Masālā and Pāpad Salad. It can also be used in wraps or sandwiches in place of mayo.

Ingredients

  • ¼ cup (35 g) unsalted cashews, raw or roasted, soaked in hot water for 15 minutes and drained
  • 2 tablespoons

Method

Combine all of the ingredients in a blender. Blend until very smooth, adding 1 to 2 tablespoons water to reach the preferred consistency. Adjust the seasoning to taste. Serve immediately or store in the refrigerator for up to 1 week.
