This masālā and the Smoky Tomato Onion Masālā form the basis for the gravy-based dishes in this book. This recipe does require some effort, but it can easily be made in advance. It also freezes well (up to 6 months), so don’t hesitate to make larger batches. Simply defrost in the refrigerator overnight, then use in your desired gravy dish.
