This variation on the Tomato Onion Masālā gets its smokiness and additional depth of flavor from black cardamom, fire-roasted tomatoes, and smoked paprika. I use this masālā as the basis for Rājmā.

Ingredients

  • 2 teaspoons olive oil
  • 1 bay leaf
  • 1 black cardamom pod, optional but recommended

Method

  1. Heat the oil in a wide pan or braising pan over medium heat. Add the bay leaf, cardamom (if using), onion, and salt, and cook, stirring occasionally, until onion is softened and starting to brown, about 15 minutes.
  2. Lower the heat to medium-low, add the garlic and ginger, and continue to stir until fragrant, 3 to 5 minutes.
