In the pasta section the Italian enthusiasm for all types of pasta enveloped in fragrant and aromatic sauces, and sometimes enclosing delicious stuffings of cream cheese and spinach, or mortadella and breast of chicken, is described. Capelletti, little envelopes of pasta in the shape of a half moon, are often served on feast days in the broth in which a chicken has been cooked.
