One of the best fishes to provide a delicious broth is the grey mullet. The fish does not perish in the process, but is served cold with a dressing of oil, lemon juice, and herbs. It is gently poached, and the resulting broth is combined with a soffritto of herbs and vegetables, simmered for a little while, passed through a sieve, and poured over already toasted bread in large soup plates. Grated parmesan, mixed with finely chopped parsley, savoury, chervil, is served separately. Som
