  • 1 pint of milk
  • 4 ounces of semolina
  • 2 fresh eggs

Method

Put the milk into a thick saucepan and bring it to the boil. Sprinkle the semolina into the milk while it is boiling and stir well until it is smooth and free from any lumps. Let the mixture cook evenly, stirring all the time, for 7 minutes. Take the pan off the fire and season the semolina with salt, black pepper, and a little nutmeg. Let the mixture cool.
