  • 1 pound of tomatoes
  • 1 chopped onion
  • 1 carrot

Method

Skin the tomatoes and chop them. Chop the other vegetables. Put the bacon rinds in a pan over a gentle heat to extract the fat. Remove the bacon rinds, throw in the chopped vegetables and the tomatoes. When they are simmering add the sugar, the herbs, and the lemon juice.
