Guivechi is a Rumanian way of preparing fish which can be applied to freshwater pike and carp as well as to the common cod.

Pike should be cooked as soon as possible after it has come out of the water. It has a rather glutinous exterior, and many people make the mistake of overwashing it to remove the glue. This makes dryer an already dry fish. The pike should be simply gutted by slitting it up the belly, and wiped with a cloth. The scales should not be removed. Carp is well suited
