Pigs’ heads are extremely cheap and make an excellent brawn. Half a head will provide enough brawn for 8 or 9 people. See that the butcher splits it in 3 pieces, or no saucepan will be large enough to contain it.
Wash the pig’s head, remove the teeth, singe off any bristles attaching to the skin, and scrape the tongue. Put it in the largest saucepan you have, and add the vegetables, seasoning, wine, vinegar, and water to cover. Simmer the head very gently for at least 3 hours, when all the flesh should leave the bones.
