Method

Use only very firm specimens. Clean the fungi, slice the caps and stalks, put them in a saucepan with a few glasses of water, some lemon juice, and salt. Cook for a few minutes with the lid on. Put the fungi into small jars with their juice, seal the top, and sterilize for 1½ hours in boiling water,
