Soon after I published this recipe, an annoyed Guardian reader sent a letter grumbling about the amount of fat in the pie. His comment somehow managed to unsettle my normally-very-good-tempered self. I guess it was the moralistic tone of the reproach, a condescending attempt by someone who, I suspect, doesn’t really like food to tell others what to eat.
