My grandmother, Luciana Ottolenghi, formerly Cohen, who’s had a huge influence on my taste buds and on my dad’s cooking, was born to a Jewish family from Rome. In this recipe I pay homage to the way Roman Jews cook their artichokes, deep-frying them in olive oil, although I take it in a totally different direction.
