My love for cold soups comes from my parents. When I was a child my mother used to make the most refreshing gazpacho for us, to alleviate the dry heat of the Jerusalem summer. It was marvellous – a little sweet, a little sour and totally light. When I recently shut myself up at my parents’ house, to finally get on with all the recipe intros for this book, my father made one of his marvellous creations: a cold creamy soup of potato, freshly picked basil, cucumber chunks and loads of goat’s y
