Gado-gado is best described as a very substantial salad. You don’t need anything else with it. A stockist of Oriental produce is essential for getting all the right ingredients, but some creative substitutes would probably also work. The satay sauce is a little work but it’s worth every bit of the effort. Use it for marinating white meat or tofu, or just spoon over hot rice or rice noodles.
