This is actually a rather delicate dish with amazing flavor. By nature, veal is less rich than mature beef so the lighter approach of adding only celery, onion, chicken stock, and sour cream complements the meat especially well, allowing its flavors to shine. The use of dill, which Laura and Peter believe should be absolutely honored as the “Official Herb of Polish Cooking,” makes this stew unique among other cuisines’ variations of this dish.
