This humble salad, together with a bowl of plain yoghurt, is an essential part of an Iranian table, the way I have known it to be. It’s usually the last thing to be prepared before sitting down to eat. By this time the rice is ending its ‘brewing’ time, or maybe the kuku is fried on both sides and somebody is already setting the table. The younger people of the house make the salad, in order to help.
