It’s not hard to imagine where this dish gets its name from, with the rice covered in generous quantities of brightly coloured barberries, candied orange zest, pistachios, almonds and saffron rice. These are pricey ingredients, so the name ‘jewelled rice’ isn’t a reference to its appearance alone. That’s also why I remember morasa’ polow mostly from weddings, or rare formal family gatherings where somebody felt the need to make a bold statement.
