The first sweet, tender fava beans of spring are always eaten raw.

Ingredients

  • Freshly picked young fava beans in their pods
  • Young pecorino cheese, preferably pecorino romano

Method

Set out the fava beans, still in their pods. Break the pecorino into chunks with an almond-shaped cheese knife and place alongside the beans. Each person shells his or her own beans. There is no need to skin the individual beans.
