Cut off and discard the ends from the zucchini and slice thinly. Salt the slices lightly and leave them in a colander to lose their water for a few hours. Dry the zucchini slices, flour lightly, and put in a bowl. Chop together the parsley leaves and garlic cloves and add to the zucchini along with the parmigiano and a grinding of pepper. Toss gently to mix.
