Ingredients

  • combination of very fresh raw vegetables such as fennel, celery, and artichokes
  • extra-virgin olive oil
  • salt
  • freshly ground pepper<

Method

Trim the vegetables, keeping only the tender hearts (for directions on trimming the artichokes). Cut into wedges and arrange on a platter. Each diner makes his or her own dressing with the oil, salt, and plenty of pepper for dipping the vegetables.
