This is just pork fat chopped and crushed (battuto) with other flavorings. It can be stored in the refrigerator in a glass jar for several weeks and used, a heaping tablespoon or more at a time, as the basis of numerous sauces and stews.

Method

Finely chop together the lardo, onion, parsley leaves, and celery. When using the mixture, sauté it slowly, stirring it often and not allowing it to brown.
