Literally “bogus sauce,” sugo finto, a typical condiment lor paste asciutte, was long used by poor people who could not afford costly meat. The ingredients simulated the taste of a true meat sauce. Today it is considered an essential element of the cucina romana.

Ingredients

  • 1 white onion
  • 1 celery rib
  • leaves from 1 small bunch

Method

Chop together finely the onion, celery, and parsley leaves. Chop the lardo.

Put the lardo in a pan and heat over low heat until it melts. Add the onion mixture and continue to cook over medium heat for about 5 minutes, stirring constantly.
