Method

  1. Preheat the oven to moderate 180°C (350°F/Gas 4). Place the potatoes in a large pan of salted water. Bring to the boil, reduce the heat and simmer for 10 minutes. Drain and leave the potatoes to cool completely Peel the potatoes, then either grate them coarsely,
