Croquette comes from a Trench word, croquer, meaning to crunch. The crisp exterior of these croquettes harbours a splendid treat: a wonderful savoury surprise.

Ingredients

  • 500 g (1 lb) potatoes
  • pinch of grated nutmeg

Method

  1. Peel the potatoes and cut into even-sized pieces (either halve or quarter them, depending on their size). Place in a large pan of salted water. Bring to the boil, then reduce the heat and simmer for 30–35 minutes, or until tender to the point of a knife.
